I did a (Saison) mash on one day, sanitized my collection bucket and let it sit for 24 hours. Started my boil the next day and went for it. I entered it into the Southern Cal. Homebrew Comp. and got 30.5 on it and the judges said that it's problem was low carbonation.
That said I tried this again with a Kolsch and went into my garage the next morning ( 6 hours) and it smelled as if someone spent the night barfing in my garage. It actually blew the top off.
