Tasty APA with WLP001 and WLP007

Mon Feb 15, 2010 10:38 am

Two carboys of Tasty's APA fermenting with WLP001 and WLP007....does 007 throw off a lot of esters around 67F or should I try to keep it a little cooler than the 001?

What are you fermenting the WLP001 at? I just kegged Tasty's APA a few days ago and fermented it with WLP001 @ 63F for the first 2-3 days, then ramped the temp up a little every day until it hit 68F. Kept it there until day 13, then cold crashed it. It finished at 1.007 but I was 2 points low on the OG (I hit 1.054 instead of 1.056).

Tastes great BTW, one of my favorite pale ale's ever. Has a nice grapefruity character that I love. Let us know how the WLP007 turns out, I haven't used that yeast yet.

I pitched at 60F (starters and basement were all cold) then ramed up to 68F overnight to ferment at 68F per Tasty's recipe. I overshot OG by 9 points because I suck at reading my refracotmeter. I am holding at 68F on the WLP001 and trying to keep the WLP007 a little cooler.

I have only had the 007 show alot of esters when it's been in really big beers barley wines and old ales. Maybe becuase it gets stressed out. I like it in smaller beers because it's very clean. I have usually started at 65 and ramped up to 67 or 68 and even gone further to finish at 72 for a few days. It sounds like your on the right track. I'd like to hear what the differences are in these two beers, when there done.
