My starter is going nuts

Sat Feb 06, 2010 12:20 pm

I'm getting ready to brew the American barleywine recipe from Brewing Classic Styles. I'm trying to grow enough yeast (WLP001) to pitch into wort with an OG of 1.115. I pitched a vial into a gallon sized jug with 2 litres of 1040 wort about six days ago. After 30 hours I put it in the fridge to let all the yest drop for a couple of days. Last night I dumped out the beer and put an other 2 liters of wort on it and it immediatly started to krausen. It was already flowing out through the foil about an hour or two. It is breaking my heart to see some of that good yeast flow out. The foil still managed to stay on. What did I do wrong? Is it still good or are there any sanitization issues that are going to significantly adversly affect the beer?

To make this process a little easier I'd get the foam control. It'll help stop boilovers as well. As far as this beer is concerned you are fine. Just one it leaves the inside of your starter try to scape it off and keep it from pulling back into your starter via surface tension from the residing krausen as it calms down.

You're gonne have a harder time cleaning your flask now but that's the only bad thing. Don't worry and maybe order some foam control for next time.

WLP-001 is the shiz-nitz for krausen. I've had 001 starters blow the cap off overnight with 1L of starter in a 4L flask, and 5 gal brews with 2 gal headspace blow off a liter of crud and block the tube at 60F.

Try to keep it under control by dropping the temp, otherwise you're fucked for this brew. In the future go for a vessel that's at least 3X the size of your starter, and you might try PacMan. PacMan is much easier to control, and I use it on everything when I don't want the (almost nonexistent) 001 ester profile.

Thanks for the tips. I'm going to pitch it along with another vial just in case.
