Trying to make the most of my current state of underemployment.
Wife suggested corned beef simmered in beer last night.
Bought a 4 1/2 pound shrink wrapped packaged corned beef from Costco and rinsed it off and patted it dry. The package says to retain the excess liquid from the pacakge, but I dumped it. It will soak for 1 hour per pound simmering in 6 bottles of Sierra Nevada Pale Ale. I added some whole peppercorns (2 Tbs) and a bit of salt (1 Tbs) to make up for the discarded picking spices. Last half hour add a whole white cabbage cut into 4 wedges and some cubed Yukon Gold potatoes and some carrots.
2 hours into it and the house smells like beer. Good dinner for the rainy Hawaiian winter night.
Edit: Found the pickling spice mix - added 1 1/2 Tsp of that an hour ago. The beef swells up, so another beer was added as well, for a total of 7 so far. 3 hours down, 1 1/2 or so to go. flipping it every hour so the small part that is floating doe not get too dried out.
