Cereal Mash for Polenta

Hey guys,

Here is a quick and hopefully a simple question.

If I don't do a cereal mash for polenta, but just add it to my normal mash will it still get the corny flavors in my beer?

yes but little to no fermentables...
Might also gum it up a bit.. not sure.

You really should do a cereal mash with the polenta. You may still get the flavor without cooking it, but you will get an awful starch haze in your finished beer. Make sure you add some 2 row to the polenta when you do the cereal mash. The little bit of conversion that takes place prior to reaching denaturing temps will help avoid the "gummyness" that creates problems in the mash.

If you don't want to do a ceral mash, use instant polenta.
