Thanks Mylo. I asked about carbonation specifically because I just listened to the Jamil show and he said to carbonate to 3.5 volumes. :pop

Not that this is conclusive research, but I have just bottled off some Wit and Tripel with 4 volumes CO2 in standard 12 oz bottles and they are both fine. The Tripel has been in the bottles for almost two months now, fully carbed in this summer heat, and there are no problems: no gushing, bottle bombs, etc. Again, not conclusive, but I was trying to see how much the 3 volume myth holds. Being shaken around on a UPS truck - dunno, YMMV.

Will there be a standard recipe for us all to follow? Or can we make up our own? I've got "Brewing Classic Styles" and would use that recipe JZ provides. I'm just curious 'cuz I've never done a saison b4. Just asking...

Its wide open. As long as it falls into the BJCP category 16c then you can brew it

This is going to get pretty interesting. If you go back a bit in Zymurgy, you'll find a handful of Saison recipes from Drew Beechum (A Saison for every Season - I think is what's on the cover). Ton of variety... looking forward to it!!

The last two community brews consisted of a recipe that everyone brewed. The concensus this time is to open it up for each brewer to formulate (or find) their own recipe for a Saison. Your choice.

I took the Brother Levonian to start with and twisted it around quite a bit. I was intrigued after tasting it at NHC. I also recently won some Opal hops in a competition. From what I heard about them - this might be the perfect beer to try them out in.

I went to the brewstore yesterday (with two recipes in hand). I found out that the Platinum WL #566 strain should be available in a few weeks. I am going to wait until then. I heard too many sob stories with the #565. I do not want to risk underattenuation. I like my Saisons bone dry. I used this strain last year and I got almost 90% AA.

I just brewed the Saison Ete from that article, but it didn't dry out enough. I was looking at the winter saison, but it is so far out of style that it wouldn't be worth the postage to enter the contest. The research continues.
