Another thing I don't really get about this recipes is why such a large grain bill?
When I entered all the ingredients in my software it estimates a starting gravity of 1.064, JZ says he shoots for 1.054. Strange but true.

What do you have brewhouse efficiency set to in your brewing software? JZ's recipes are formulated for 70%. If your efficiency is higher, you'll have to adjust the recipe.

Are you formulating for 5 or 6 gallon batches? A number of us when starting out formulated recipes for "5 gallons" even though that isn't really 5 gallons, whereas JZ formulates for 6 gallons allowing for losses in transfers etc. If you are, then that would make your gravity about that much higher when inputting the recipe.

Yeah while I'm not too sure what my actual overall effiecency is ( I'm using beersmith) but it was set to 70%. I did calculate the batch for 6 gallons. But alas, its says it is a high OG for a Cream Ale.

I actually asked JZ this exact question and he said that he just dumped it into the brew kettle while sparging. The sugar was completely dissolved and by the time sparging was complete. I've brewed this beer several times and it's great.
