Your Dream System

Once again... faced with too many variables and options I am hard pressed to come down to any sort of decision on what kind of brew system to build.

I have access to angle iron and other varieties of metal stock, access to welders, gas lines, and burners etc.
I have a fantastic cookery store with all sorts of kettles and equipment to build.

It would seem like I have it all in front of me...

If you were in my shoes... what would your dream setup look like?

Honestly, I have been looking at the HERMS system that a guy on the HBT put together with 2 coolers, electric heating element in the HLT, and a keggle.

I do not want to direct fire mash. I don't trust it.

Hmm, give me 2-3 weeks and you'll see it (well, at least phase one). It is basically a modified Brutus (larger to accomodate everything from Sankes to 20G kettles, if necessary). HERMS, hard plumbing, gas fired (for mobility).

My point in asking that question, was to get some ideas and insight into my own setup. However, after reading and researching and scouring the web for setups and design, i realized it's going to be different for everyone, and there are million ways to execute a brewing arrangement. It really comes down to personal style and your own process. So I figured, asking the question wasn't going to really yield anything worthwhile.

But man.. that brewing rig here.. now that's kickass.

That'd be exactly what I would setup.. and he's as anal with detail and quality as I am. It would seem, however, that he has a few more funds available, and a forgiving wife!!

Guess I can't do anything about that... ;)

For now, I don't mind my Folding table onto a folding chair into the kettle on the ground method. :)
