Bub's recipe is pretty much the same as mine except I use crystal 10 instead of 40.

Not trying to bait you into anything....but.....
What is different about them? Like I said I always use Wyeast so I have no basis for the WLP300. I just tend to trust things from Kristen.

I am terrible at describing the flavor differences.

WLP300 usually has a bubblegum flavor

WY3068 tastes like a true German Hefe served in the Motherland

Try a batch side by side and you tell me.

This is still one of my all time favorite threads. Quick update from my end -

I brewed up a 5 gallon batch aroudn Halloween using WLP300 and it was widely considered to be one of the best hefe's most of my club had tasted at our Xmas party last week . They drank the whole keg. It was pretty darn good if I do say so myself. Problem is, now it's gone.

Since reading this thread a few months ago I've been intrigued by Bub's exhortations about 3068, so here is what I am going to do.

I will brew a double batch of my normal (incredibly simple) hefe recipe and ferment 5 gallons with WLP300 and the other 5 gallons with Wyeast 3068 - I will have the ultimate side by side comparion, and as a side effect, a shit load of hefe on hand to enjoy for some time. I will be able to compare these two side by side under identical conditions. Then I'll know if Bub is speaking the gospel about hefe yeasts. So let it be written, so let it be brewed... :D

Oh, sorry. Just got in to groove. I would be interested to know your results. I am gearing up for a hefe in January.

I did exactly that last summer. Basically, you end up with Weihenstephan in one half and Pyramid Hefe in the other.

3068 made the good one. I have to agree with Bub on this one. Not because he's my homie, but because the brotha knows his Hefe. I made three attempts at a Hefe with WLP300. They all sucked. Finally I discovered 3068, and I will never make a Hefe without it.
