The last two community brews consisted of a recipe that everyone brewed. The concensus this time is to open it up for each brewer to formulate (or find) their own recipe for a Saison. Your choice.
I took the Brother Levonian to start with and twisted it around quite a bit. I was intrigued after tasting it at NHC. I also recently won some Opal hops in a competition. From what I heard about them - this might be the perfect beer to try them out in.
I went to the brewstore yesterday (with two recipes in hand). I found out that the Platinum WL #566 strain should be available in a few weeks. I am going to wait until then. I heard too many sob stories with the #565. I do not want to risk underattenuation. I like my Saisons bone dry. I used this strain last year and I got almost 90% AA.
