My IPA lost its aroma!

Mon Jan 26, 2009 9:59 pm

Ok, I've made my IPA recipe several times (slight modification of Jamil's--yes Jamil I did make it your way first!). Moral of the story, each of the few previous times I've made it I get that deliciously big hop aroma. For some reason this time, I did not.

The hop flavor is still excellent. The bitterness is appropriate. The malt character is still excellent. What could have made the aroma go away?

Do I have any options besides dry hopping? I have more hops on order, but none on hand so it's not really an option for this batch which I brewed for an event in 3 days.

Do you have a cold? Maybe it's there and you can't smell it.

I would look at the freshness of the hops, the type and amount you used and whether they where pellet, or whole.

I would refrain from dry hopping if the beer is already carbonated. I have done this in the past with very unpleasant results. It's best to dry hop a beer at room temp and un carbonated.

I used cascade and amarillo pellets, purchased fresh from northern brewer, used at 5 and 0 min, the same as I did previously. Except before I had a tremendous fresh hop aroma, and this time I have an incredibly mild hop aroma.

The only other thing I can think about is that I gave it a better shake than last time and the yeast took off faster, but fermentation itself was not longer or more vigorous, it just took off earlier.

One thing that has happened to me before was the carbonation wasn't quite right. Try adjusting that a bit. I know the last APA I made started out nice and hoppy smelling then I think it got a tiny bit more carbonated and the hop smell was gone. After a week or two in the fridge it all of a sudden came back. Naturally the last two or three pints were crystal clear and were the most amazing beverage ever created on this Earth and as I picked out some bottles to save it in the keg kicked. :(
Too much of a good thing....is a very good thing!
