Ooh, that was a good idea. I hadn't even thought of a Scottish style. See, sometimes I just need a nice kick in the head.

I decided to do an Imperial Stout and a Robust Porter. I will probably keg half the Porter and bottle the other half and bottle all of the IS.

I wanted to do a Saison as well but my LHBS doesn't have the yeast and he told me that it would be at least 3 weeks this time of year if I special order it. Ill probably do it once the three in my queue are done.

What about Porter, Robust Porter, or Imp Stout

Wondering if these would be candidates and how long they would last under aging? I've never done a porter and would like to do one up for drinking late fall/early winter.

sour beers take years to hit their sweet spot. i'd throw in high gravity lagers like dopplebocks too.

i have to disagree with nate though on the IIPA's, even the 10%ers taste best fresh when the hops are at their most intense. not that they suck after a year, but they don't get any better.

That is why I said "to a certain extent," I personally have not brewed one to test that thought out but I hear it all the time. It makes sense though.

Yeah, the IIPA's are one of the few (hefe's also) that are best fresh (IMO), it loses that intense resin/citrus character after a few weeks and fades to a good but less intense beer.
