The Wit I made without a late hop addition and with Wyeast Wit Ale is currently carbing. As it went into the keg it tasted nice. I think I like it without the late hop addition. Although there still was a bit of a weird off aroma from the yeast....at least that is what I am hoping.

Anyone else get a "burnt rubber" aroma when your Wit is young? I seem to get it quite often when using Whitelabs....and am getting it a little bit from the Wyeast. A friend suggested it might be autolysis, but I pitch a good starter, pitch cool and let it raise to ferment and finish fermentation within a week or less. Not sure where this is coming from but I have only noticed it in the last 3 or so years.

Just add some lime zest at the end of the boil (2-3 limes). Can't think of any hops with that flavor profile.

I had heard that Motueka has a bit of a lime note so I added 1/2oz to a corny of belgian tripel. I thought I got a little lime note the first 10 days or so, now it's moving toward Muscadine Grape, more and more each day. Maybe that's the passion fruit that I've read contributes.

I brewed a wit with indian coriander, orange/lemon peel and citra hops and used the Wyeast 3711 French Saison. Absolutely the best wit I have ever had and I am not a huge fan of the style. My wife loved it also!
