New to lager, a few quick questions

Mon Jan 08, 2007 2:42 pm

I just brewed my first Marzen and I had a few quick questions Im hoping someone could help with.

What should be the FG when you start the lagering? Im wondering this since someone told me it is still fermenting during the lagering procedure.

Is lagering normally performed in the keg or in a secondary fermentor?

Thanks in advance.

You start lagering after you reach your final gravity. Fermentation should be complete (or nearly so) while the beer is still in primary. During the D rest (assuming you do one) the yeast are not really fermenting, they are cleaning up by products produced during the active fermentation stage. This continues at a much lower pace during lagering.

If you start lagering before fermentation has stopped, your attenuation will stop a little short of where it should be.
