Some serranos and habeneros are also in the garden as well as Hawaiian chile peppers. Maybe some chipotle - smoked pepper with the smoked meat.

Lettuce did not make sense, but I thought I saw them dump cole slaw on top of the sandwich on those Carolina shows, but that is BBQ pork and this is BBQ beef.

Smoking ribs, beef and brewing a batch of beer are a great way to spend the day.

We have a tasty cornbread recipe dialed in. Any other favorite sides? Plenty of time to practice here as it is almost always summertime here.

Yes I agree - Mrs. BC has some baked beans recipes. And cornbread.

If you have a bean recipe you like - please share. I think she uses a couple cans of beans, brown sugar, mollasses, and a few things and she bakes them as I am smoking/brewing.

Just curious if there are other sides folks enjoy with BBQ.

I know Dirk has already seen this, but here is Mrs. BC's cornbread again for others:

There is a (well liked) BBQ place in KC called Oklahoma Joes that does a popular sandwich with provolone and an onion ring, I think (z-man).

I'm in the camp that BBQ is about the meat. Pickles and a small amount of sauce is more than enough.

I usually like my cole slaw on the side but it probably goes better with a pork sandwich than beef as I think the beef will overpower it.

Nothing. A sandwich with bread, then BBQ, then bread. Need a side dish? More BBQ.

I'd add some slaw made with a mixture of cabbages (green and red), carrots, sliced apples and some apple cider vinegar. This would be really good if you used apple wood to smoke.

Not really a recipe. I soak some pinto beans overnight, drain them, cover them with fresh water. (I used to put a whole jalapeno in the water too, but never really noticed that it did anything besides float.) I chop some raw bacon and toss that in, and I add a a small onion that I have quartered. (I would put in chopped cilantro but someone in the house doesn't like it  ) Bring it to a boil, then cut the heat back and simmer a couple of hours, till the beans are tender. Salt and pepper to taste in the last 30 minutes or so.
