I have used pepper before an always put it in at the end of the boil, kind of like aroma hops, and never had a problem. I'll sample mine in a week and let you know.

I sampled my version of the beer as I was kegging it. The pepper is there, but subtle, and in the background behind the malt. Now I have to wait a couple of weeks to see how it will be when it's carbonated. :cry:

I'm gonna have another go at this beer this week.

What's your thoughts....?

Pepper in at 5 mins....or..... BCS suggests to add a bit in the boil and the rest in secondary. From memory old mate from F'more said they add the pepper in the fermener?

Do you think pepper in the secondary would still result in that stewed flavour or a sharper flavour?

Looking forward to getting this right.

I'm going to have to listen to the show again. I thought the pepper was added to the kettle. They might have said to add it to secondary.

I just checked their site: "Black, cracked, stuffed in a sack, boiled and cold-infused." I can't tell if it's in the boil or not. . .

EDIT: Just listened to the show, and the pepper should have been added to the fermenter. Oopsie!

I have had a could of these the past few weeks. I couldn't pick up the flavor from the pepper. Maybe it dies down after being bottled for a while?

I imagine that the pepper accentuates the malt and adds complexity. On the show, the brewer said he wasn't going to mention the pepper, but the labelling laws kind of forced him to. It would be nice of I could find a sample here. . .

It was still a nice beer. I would love to share, but finished them off! Had them delivered from WI since we can't get them here in CT!
