So I thought I'd give this a try even though I usually do just fine pitching directly from the smack pack.

I smacked the pack as I began my brew, brewed, put some wort in the flask and the rest in the fermenter in the cooler. Now I pitched the smack pack in the flask and it is bubbling away.

QUESTION: It has been 24 hrs since I pitched into the flask, the yeast are still active. Should I pitch the whole thing into the fermenter, or put in the fridge to crash and decant the existing wort and pitch the slurry?

Pitch while it's active unless your starter is oxidized.

I'm going to try this method. Will pull off a few liters from the middle of my lauter, when the gravity might be around 1040. Can check it with hydrometer and adjust if necessary. Can then boil and cool this starter wort while the main batch is lautering/boiling/cooling and pitch the yeast. Can then use this starter for the current batch, or the next batch if it's coming up soon.
