adding ergosterol

I read in chris white's YEAST book that the sterol that yeast produce when they take up oxygen is ergosterol. Ergosterol is pre-vitamin D2. We make a pre-vitamin D3 in our skin, 7-dehydrocholesterol. Both pre-vitamin Ds are converted by UVB radiation to their more stable vitamin forms (either cholecalciferol for D3 and ergocalciferol for D2).

Well....you might ask yourself, why does this jerk know so much about vitamin D.... I work with vitamin D. I developed a method to measure vitamin D and its metabolites in blood.

This past weekend I brought home some ergosterol from the lab. I added 100mg of it to a 2L starter that had 2 vials of WLP002 in it. The starter was set up only 18 hours before the yeast was split between 2 5 gallon batches. I'd have to say that the fermentation picked up pretty fast. At least faster than normal. Especially considering that the white labs vials were set to expire next week.

Might be interesting to see how these beers turn out.

So did you not aerate your chilled wort before pitching then?

I did aerate. I didn't set this up like a good experiment should be. The two beers i added the starter to were not even the same (one APA and one IPA). Ideally I'd do a starter with erosterol and one without and compare adding oxygen to just ergosterol. For this run, I just want to see if there is an off flavor.

At NHC, I will have a poster up there about an experiment i did adding n-acetylcysteine to a yeast fermentation. That experiment was set up properly. You'll have to go to NHC to get info on that experiment.
