Re: Green Olive aroma

Here is the update...

My girlfriend... an extremely harsh critic of my homebrew.... has tasted the suspect beer now. Unfortunately she over heard me discuss this subject with one of my other brew buddies on the phone. So I had her taste it and asked her if she got the green olive. She tasted it and said no.. She is now currently working on her 2nd pint of it. So I guess this was all in my head. This beer is still very young and I wouldn't consider drinking a whole pint of it let alone 2. But if she is drinking it then it must be ok.

Thanks for the help guys.

Sometimes DMS comes across as Green Olives or even Celery.
If it's just in the aroma, don't sweat it too much. Next batch, you might need to boil a little more vi-gar-ose-ly, or go for a longer boil (I'm assuming you did a typical 75 min boil (15 from first wort to hot break, then 60 mins from then). Pilsner malt typically needs good 90 min boil.

Of course, if you already did that, then try to minimize the time the wort is sitting post boil but still above 140F. This is to minimize SMM production (which is DMS precursor).

Not boiling Vi-GAR-OSE-LY must have be my problem. My Scottish 60 has a green olive aroma to it.
