Hops with strongest tropical/pine/citrus/floral flavors?

Tue Jul 06, 2010 8:23 am

Hello,

Going to try and work up my own IPA recipe here soon after doing two starter kits.

Wanted to get a better idea of which hops give which types of flavors. So which specific hops have the most dominant tropical/pine/citrus/floral flavors respectively?

Thanks!

I have found that Citra really kicks sweet citrus and mango, Amarillo and Cascade for Grapefruit, N Brewer seems to be almost minty, lots of the European varieties, think Hallertauer triploids etc, seem to give me the most floral. Piney Dank can come from CTZ or even sometimes Chinook. I'm sure others have some more hints as well.

If I were going to make the most citrusy IPA ever, it would consist of the following:

Warrior(bittering)
Chinook
Centennial
Amarillo
Citra
Sorachi Ace

Citra is quite tropical.
Chinook provides pine and grapefruity citrus.
Cascade is the classic grapefruity citrus.
Amarillo and Centennial are more lemony or even orangey citrus.
Saaz is the absolute most floral hop you'll ever see, but you have to use like 6 times as much as you think you need. Slight exaggeration but you get the idea.
Kent Goldings is also floral.

And I know you didn't ask, but here's some more:
Hallertauer and Tettnanger are more spicy and herbal, as are Fuggles.
Cluster is dark berry-like but can sometimes be a bit unpleasant if you use too much.
Simcoe is like Chinook with some cat piss thrown in for good measure.

Those are my choices, with the exception of Sorachi Ace. I think Cascade is a better choice. My Sorachi Smash flavour is heavy with licorice flavour. No lemon at all.

I didn't see Riwaka mentioned under the citrusy/grapefruity category. I have a mostly Riwaka IPA in primary that should be close to overwhelming citrus/grapefruit. Should be a good one. my .02c

Galaxy hops give a strong passionfruit aroma when dryhopping.
I don't know if you can get it in the US. I use about 20g to dryhop 20L.
