I have always read that the pits lend an almond "kirsch" sort of subtlety to the beer. When brewing with wild yeasts I believe that real lambic breweries do add the pits to their beers as well for long term aging. I did not notice any off flavors from leaving the pits in the cherries on my last batch.

I left my cherry wine on the pits for a month. I too have been told that the pits lend complexity.
