How long do YOU boil spices for?

Tue Oct 13, 2009 3:24 pm

Just wondering how long everyone likes to boil there spice additions for?

5 min?
3 min?
2 min?
1 min?
knockout?

Does it depend for you on what style of beer your brewing?

I usually put my spices in at the end of the boil. I figure it doesn't need the time to isomerize like hops do and long heat times just gives it time to denature. If you put it in a flame-out it should have plenty of time to santize anything on the spices.

5 minutes. I tried more spice at flameout with inconsistent results. Tried less for longer, and always got more spice flavor than I wanted.

Usually at 2 minutes, but I don't spice beers too often. I guess if I were doing a traditional wit I might move them up to a more traditional 15 minutes.

Usually at 5 minutes or flameout depending on the spice. If you whirlpool and let things settle before "knocking out" to your kettle, adding things at whirlpool is probably best.

I like 10min on curacao and 5min on coriander. Gives me the flavor I'm looking for.

Finally got my pumpkin spice ale going this weekend and decided to go with adding the spices for 30sec. Hopefully just long enough to sanitize, but not too long so as to lose too much aroma. Also planning on using a hot tea infusion to add back some spices on kegging day.

How do you find the flavors vary depending on time in the boil?
