Help with potential off-flavor

Fri Sep 11, 2009 9:28 am

OK, so it been about 2-weeks at 60 deg F (each was racked onto hops) with each keg of my split batch. The wet cascade/dry centennial batch tastes clean, crisp and fairly hoppy. The dry cascade/dry centennial batch has a flavor I cannot quite describe..it seems to be a lingering middle flavor I am unfamiliar with. I wanted to use the word plastic or rubber but there is also some perceived sweetness I think. I THINK it could be an off flavor, but am struggling to describe it and ID it.

- Both kegs were clean and sanitized (to the best of my knowledge)
- Both batches were from a single 10-gallon batch and tasted clean and nearly the same before transfer to keg with hops.
- Both hop bags were sanitized.
-The "clean" batch was wet-hopped with cascade, the not-so-clean batch was dry hopped with cascade and had 2 sanitized marbles as a weight in the hop bag (forgot the marbles in the wet-hop batch)

Do dry cascades have an almost sweet taste when dry hopping? It's almost an off sweetness that lingers on the tongue? I know its nearly impossible to evaluate a flavor from another person's description, but any inputs are appreciated.

I am chilling and carbonating now.

Impossible to tell for sure without tasting. It's possible that that half of the batch got contaminated. Or... who knows. But I don't think it has anything to do with wet hops vs. dry hops. That shouldn't have made the difference. Unfortunately, it's likely to be contamination, if it's just the one half batch and not the other.

Sorry I provided no detail.

11 Gallonos split between 2-carboys and treated exactly the same until dry/wet-hopping time

OG 1.065
FG 1.015
WLP001 with starter according to Mr Malty Pitch Rates

At 3-weeks both had same FG And tasted the same.
- Batch 1: 1 oz Centennial plug, 1 oz Cascade pellets in a bag with 2 sanitized marbles)
- Batch 2: 1 oz Centennial plug, 7.5 oz wet flash-frozen Cascades

The dry/dry batch has the weird, lingering middle-taste. Not plastic or band-aid. It's all in the aroma and was not there prior to dry-hopping.

The dry/wet batch is great, nice clean, hop flavor with some expected grassy flavors.

Notes
BCS pg 134

8/2
OG was a little higher than anticipated, but consistent across the boil off; pre/post-boil gravities were both 5 points high; 5:1 wet-hop ratio so I added 10 oz fresh-frozen wet hop cascades at flameout instead of 1 oz cascade & 1 oz centennial pellets; volumes are approximate since I do not know how much the false bottom and wort chiller displace the readings; pitched 1.8L/4 vial starter (900ml in each carboy); oxygenated 1 min with pure O2

8/3
No activity at 12+00; active fermentation visible 18+00 after pitching;

8/23/09
1.015; both carboys taste the same, lots of citrus flavor and smell, almost a grapefruit/tropical aroma; began chilling to 60 F

8/26/09
1.015; 1 oz Centennial Plug in each, 1 oz dry Cascade pellets / 7.5 oz wet cascade in each

8/26/09
1.015; Keg with tape got 1 oz Cascade pellets and 1 oz centennial plug, keg without tape got 7.5 oz cascade wet and 1 oz centennial plug; next time sub 1 lb cor sugar for 1 lg LME and consider food processing the wet hops first. Forgot to weigh down the wet hop bag.

Maybe the bag is the culprit?

You know, maybe you are right...I dipped them both in StarSan, but it could have had some off odor on it since the homebrew store tends to smell "perfumey."

Hmmmm.....
