How much extract would you add to a full keg? I made a coconut porter once with tons of toasted coconut in secondary. It was God Awful Delicious and coconutty in the fermenter. After I kegged it. It lost a lot of that great flavour and aroma.
I was thinking it may have been better to leave some of that coconut in a bag in the keg. I also kind of wish I would have made a funky desert out of that beer fermented coconut. It smelled too good to throw awy. Oh well the worms liked it. :D

I used 5 tsps of coconut extract in my keg. I think its a perfect amout - just on the threshold of perception. Actually, it comes through more in the aroma, which is all you need. German chocolate cake in a glass...

Great recipe, Doc!

Yeah just barely noticeable is the best. It'll smell stronger than it tastes and it's really good that way. I chose to dose the glass instead of the keg. I'm glad I did because after a while I preferred the stout on its own. Great beer though.

I think I figured this out earlier (since I'm still extract myself) that it is about 4 pounds of DME per 5 gallons, plus a pound of 2-row. I configure it with 2-row because you need to mini-mash the oats, etc. LME is a bit more, like 4.5 or 4.75 pounds. If you need free recipe software checkout QBrew (can download at http://www.brothersoft.com/qbrew-165297.html).

What I recommend is to use promash or beertools or whatever you prefer. Enter the recipe as is. Then remove all but one pound of 2 row and begin adding your extract to the recipe until you get the same gravity. That should do you just fine.

I recently picked up BeerSmith as Promash has not been updated in a long time and I am just getting used to using it. I understand the suggestion and will give it a go. Thanks for the feedback.
