Back to the topic though...
One of Duvel's biggest strengths is consistency. So I would guess that if you are having an "every bottle is different" experience, you have gotten some mistreated bottles.

I really, really liked the Duvel Draft that can be found in NYC and Philly. It is less alcohol, and I think it allows the more subtle aroma and flavors to come through. I had it on the same night as regular Duvel and I thought the alcohol actually detracted from the flavor. It's certainly a classic beer though. That's not a matter of opinion.
