I'm with you... we have an old coal cellar that I'm going to clean up a bit. I think I'm going to do some drywall with insulation so I can keep the room at a nice temp and close over the window that we have.

Every time I think about cellaring some beer, these are the two sites that I got to to keep me on track. I just want to do it right... when the time comes. Right now, I'm just keeping beer in a wine rack (not on their sides).

This ones for you BadRock... I have a friend that works for Flying Dog and he hooked me up with this while I was out there a few weeks ago. Never released... Barrel-Aged Gonzo Imperial Porter... Sour. After they aged it in the Stranahan whiskey barrels, they inoculated them. he found a few bottles... I got one. Don't know when I'm going to open that one, but I can't wait!!!

Plus I've got 4 x 750ml of Beatification coming to me after Christmas.

I love collecting beer... almost as much as I love drinking it!! :pop :aaron

Barrel aged Gonzo Imperial Porter?! Awesome. Make that +1 to collecting is as much fun as drinking and brewing.

Sidetopic/Question - getting ready to txfr my Russian Imp Stout to a keg for 6-months of aging. Planning to put it in my chest freezer at 55 deg F. Should I attach a makeshift airlock or an air filter to one of the posts so it does not slowly pressurize? I cannot burp it weekly since I will be deployed.

Thoughts?

LOL, It funny that you say that. I have a few cans of the old cans that was caned at the 21A of the Watermelon and the IPA.

I have some Stones,Russian River, Lost Abbey, and a few sours, along with a few of my beers...

I have heard some people caution against aging in a refrigeration unit. They say it tends to dry out the seal around the cap and some units go through temperature fluctuations that might not be good over time.
