I did get a bottle of Westmalle Dubbel after I made this thread and right before I brewed though, it was a good thing I did too or I'd be clueless, even more so.

Ok so my first attempt at a Dubbel is ready to drink, it's good but has a kind of bubble gummy thing going on.

Any tips on avoiding that on my second attempt? It has the raisiny plumy thing too which is good. It snot bad but not as good as I want it to be.

I will be brewing another Dubbel in about a week, I thoroughly cleaned my entire system, replaced all vinyl tubing, the works. I don't think the slight bubble gum flavor was caused by any infection but I wanted to make sure so I replaced the tubing at the end of my counterflow and ran 160 ° water with PWB in it through it. It snot that strong but I pick it up and I don't like it. Bubble gum doesn't belong in beer.

I'm not really a Belgiany kinda guy, I've never brewed any Belgian beers before but this is for a Homebrew club competition and I want to step out of my comfort zone so I can learn more and I want it to be the best possible, why not do the best I can right?

Ferment cooler. Use WLP530 - more spicy and less fruity.

bubble gum is esters. clove is phenolics. you sound like you like more clove and less esters.

I used WLP530 on this last one and I fermented at 66, this next time I shall ferment at 64 and see what happens.
