Orange Blossom Pilsner

I'm new here and would really appreciate some help with a recipe. I acquired the following........
65% pilsner malt
4.2% white wheat
2.1% crystal 10lb
3.6% honey malt
25.1% orange blossom honey

and 10 ibu's of cascade

soft water and 64f ferment with wyeast 1056

there is 1g of honey in every 15.5g keg
can any one help me put this together as this is going to be my first

First, Welcome-

Second, you said this is going to be your first. But, you didn't specify first WHAT.
First batch? First AG? First Mead? First Lager? First attempt at formulating this recipe? First attempt at formulating ANY recipe?

What OG are you going for? 1 gallon of honey in a 15.5 gallon keg is not a typical way of expressing the honey contribution. Batch size and lbs would be easier for us to help guide you.

It WILL make a huge difference in perception if you put 10 IBUs in a 1.040 beer vs 10 ibus in a 1.080 beer. A good rule of thumb is to use the "BU:GU Ratio" of bitterness units divided by Gravity units, so 10 ibus in a 1.050 beer has a bu:gu of 0.20. .50 is evenly balanced. Higher is hoppier. Lower is maltier.

Please help us out by adding a little more detail. (If you don't know what OG you are shooting for, just give us a target Alcohol by Volume percentage)

first attempt at brewing ANYTHING. actually the percentages were given for OBP Squared. same as the original [orange blossom pilsner] except half the water. i was told the honey calculation would be tough and to use promash, and for my info there was a gallon of honey to every 15.5 for a cross reference. 11% ABV

here is the actual info:
Here it is in % for you to calculate
65% Pilsner malt
4.2% White Wheat
2.1% Crystal 10LB

The honey will be tough to calculate unless you have ProMash
fyi there is 1g of honey in every 15.5g keg
Use this to cross check

And 10 ibu's of Cascade

Soft water and a 64f ferment with Wyeast 1056

These should get you in the ballpark.
The AG version is closer to the specs but I'd NEVER suggest it as a first batch for a brand new brewer. I included it only for reference.
The Extract version is IMO close enough and a hell of a lot easier, especially for a first timer. You won't be able to tell the honey malt is missing because of all the DME and crystal malt.

Add the hops with "X minutes LEFT" in the boil.
Add the honey with about 5 mins left in the boil.
This is a really big beer. You really will need to do a full boil. Partial boils will be cloying.
Be sure to go up to http://www.howtobrew.com and read all of John Palmer's instructions for brewing your first extract w/ grains batch before trying this. Ask questions here after reading that. Don't wait for brew day to learn what a muslin bag is or how to steep.
Use these ingredients and amounts and times, though instead of his Cincinatti Pale Ale ingredients. The concept is the same.
The Crystal malt should be crushed ath the home brew store and you can steep it on the stove in a muslin bag for 30 mins in a gallon of 150F water before you add that water to your full boil pot.

5 Gallon batch

All Grain recipe-

OG: 1.098
IBUs: roughly 10.

12.5 lbs Pilsner malt
0.81 lbs White Wheat malt
0.5 lbs Crystal 10LB
0.75 lbs Honey Malt
4 lbs Orange Blossom Honey at 5 mins left in boil
0.5 oz 5% Cascade at 60 mins left in boil
0.5 oz 5% Cascade at 5 mins left in boil
Wyeast 1056. Ferment cool at 64F for 3 weeks.



Extract with steeping grain
OG: 1.098
IBUs: roughly 10.

8.5 lbs Extra Light/Extra Pale Dry malt extract
3.00 lbs Wheat Dry Malt Extract
0.5 lbs Crystal 10L
4 lbs Orange Blossom Honey at 5 mins left in boil
0.5 oz 5% Cascade at 60 mins left in boil
0.5 oz 5% Cascade at 5 mins left in boil

Wyeast 1056. Ferment cool at 64F for 3 weeks.

Cool-

To answer the question about how I came up with the recipe, I looked at their web site for a description of the beer,
tweaked to use extracts and NOT to use malts (like honey malt) that require diastatic conversion. I matched up the IBUs and basically put together a blonde ale recipe w/ orange blossom honey that would be approximate to what you and their web site described. Like I said, it's not a perfect match, but it will be tasty and a lot easier to brew as an extract batch.
