Agreed. Even 6-7 wks later the spices had noticeably faded. Some of the saved tincture can be added back to bottles by a dropper if entering them in competitions for that fresh spice nose.

I've had this recipe bookmarked for a couple months. Finally got the chance to start it this past Friday. Though I just now read all the pages, so I didn't bag the oats to rest. Once the baby goes to sleep I need to run up and get the turbinado.

Hey Bugeater, a hopefully quick question for ya.
I drew a sample Saturday night, I'm at 11 pts, but it's still a little "green" tasting.
The yeast was pitched Sun Apr 27th., stored in the basement at a steady 18°C.
Since I had the sample, I poured a tad of the bourbon mix to see how that was.
Tastes like clove oil BLECH!
It smells good in the bottle, but the clove is way too strong in, oh idk ~4oz sample.
No doubt it'll be far more dilute in a keg, but should it taste so strongly of clove?
I used a 1/4tsp scoop of whole clove, I don't recall the exact number of pieces though.
If the flavor isn't right, do you think it can be fixed?

This is an expensive brew, I hate to ruin a whole batch.

Recently tried making this one again. Had to dump the whole batch, it came out smelling and tasting like briney green olives. Wtf...

Green olives indicate an infection - usually pediococcus which produces lactic acid and acetic acid.

Sanitize the shit out of all your equipment and just toss any rubber/plastic that got in contact with that batch. Otherwise you'll tasting olives in everything you brew from here on out.
