Suggestions needed for an ULTRA HIGH gravity beer

Tue Feb 28, 2006 1:58 am

Like the subject line dictates, I am in search of "ULTRA HIGH Gravity Beers"

I am 90% sure I just got an overseas internship, so I will be gone for a year starting this May, sooooo...I wanted to brew 6 to 12 15+%ABV goliaths so when I return I can celebrate (God knows I wouldn't have the patience to wait on these if they were sitting in front of me at home). Since this would be, to an effect, a BN collaborative effort, I would also like to donate three 22oz bottles of each beer to the show, which I will send in once I return. I figure 18-36 22 oz bottles of a heavy hitting beers will be sufficient to leave Justin's mouth numb (don't take that the wrong way), Doc explaining every answer to excruciating detail, and possibly even make Jamil proud.

So I am looking for any and all suggestions of your personal favorite recipes of 15+% goliaths, particularly: at least one Russian Imperial Stout and one "fun" recipe (interpret that as you may).

Thanks a ton in advance!

Ionia, Would you happen to have a favorite Belgian recipe that could be modified to 15+%?

I like the idea. What about Meads and Ciders? Both of those benefit greatly from long aging. Can you lager while your gone?

I'm going to think about it for a bit and then I'll post again.

I was considering the mead option, would you happen to have a recipe you particularly care for?

I could do a lager, but it would be both a hassel and expensive to be running a full size fridge for a year for just one beer, perhaps if I were to be lagering three or more. Once again, any good lager recipes that could be blown past 15%ABV?

hmm no, but you could do a tripel/dubble-maybe the Quad-... maybe 12lb and a few lbs of sugar, you could sparge and collect a few extra gallons and a longer boil. and then honey and maybe some turbinado sugar... disolved in water added to secondary, maybe go for 30 IBUs.. mostly in bittering addition.

Hey Speyedr, I would be looking for all grain preferably!!!! But I would be willing to cheat a little and add some extract for the extra "umph."

Thanks, Bia
