Parti-gyle Recipes

Fri Nov 28, 2008 2:29 pm

Anyone have a good parti-gyle recipe? I'm thinking about doing this to get the most out of my grains (and $$$).

I was considering making a big ass Belgian Strong Dark and then an Abbey with the 2nd runnings, but I have no idea how to tackle this recipe. BTW - I brew 10 gallon batches, so I was thinking 5 gal of each beer and bump the smaller with a little candi sugar if it is too small.

Anyway, any info or experience with parti-gyle is appreciated.

I think you have already figured out most of it. Don't worry too much about the gravity of the second runnings beer. It's a table beer; As long as it's above 1.035 or so it will satisfy. Although, you can certainly add extra candi sugar if you want.

I typically do partigyles when i make any Belgian strong ales or Doppelbocks. Some other candidates would be Barleywine, Old ale, Wee Heavy, or Russian Imperial Stout. One of the nice things about partigyles is that the first beer is usually extra smooth because it is no sparge beer.

One other thing you can do is add some extra crystal or other pre-converted grain to plus it up. Victory, chocolate, crystal all make good malts to add for the 2nd runnings.

How about adding smoked malt to the second runnings of a barley wine? I thought about doing a parti-gyle beer like a BW and then adding some smoked malt and making a mild ale. Thoughts...I also batch sparge which I think it helps doing parti-gyle. Has anyone else had any problems or concerns with doing a beer this way vs. the "normal" way.

The thing to watch out for is whether the malt you want to add needs to be converted. Rauchmalt must be mashed, so it's not suitable to be added post-mashout.

Thanks for the tip. I'll try it one day and report back on how it came out.

Here Are a few tips that I use when doing Parti-gyle beers:
You don't need to use the second runnings as they are you can add anything you need.

Always have some DME on hand- It will help raise the gravity if you need to.
Have some extra yeast- I like to use yeast that have low attenuation numbers for my second runnings(wlp002,wlp810, wlp051)
Have a few specialty grains on hand- If you want some more flavor from your second running you can steep some extra grains in you boil pot.

Here are a few beers that I have done:
IIPA was the first running and a California Lager for the second:
For the Lager I added some rice syrup and used wpl810.

English IPA for the first and a Mild for the Second:
For the Mild I steeped some Cara-pils and Pale Chocolate and wlp002
