Seeing as the beer came in at 1078, can I just add the invert to my primary when the yeast is really cranking to make sure it ferments without any problems? I pitched yesterday afternoon and today the fermenter is rolling away.

Any help would be appreciated. Just trying to avoid the 2nd-ary since I am going to keg this anyway.

This recipe sounds awesome! I would like to try and brew this...unfourtunatly I'm not set up to do all grain. Does anybody have an extract recipe for it?

I served two beers at our company's open house: a wheat beer for spice-a-phobics, and Bug's Winter-Warmerized Oatmeal Raisin Cookie Amber. I cam home with half a keg of wheat and a gallon of the amber. Everyone came up and said, "I have to try that cookie beer." I think I'll have to make it again next Christmas.

One more thing. I wasn't able to get a hold of a Vanilla Bean until recently. How long do the spices need to steep in the Bourbon?

I let the spices steep the entire time the beer was in primary, two weeks.
