I brewed the APA yesterday, following the grist but not that original hop schedule.
According to Beer Alchemy, the preboil gravity would have been about 1.041, and FG of 1.055.
I had added to my boil-off rate given that it's mid-winter here. By the time I got to the boil, it' was in the upper 20s.
I ended up with a FG of 1.059 however. I believe my sparge ended up giving me a little more than the 8 gallons I wanted to start with. So, if I hit my pre-boil gravity, but with MORE liquid, my efficiency must have been a bit better than the 69% I use in the calculations. (this is my 5th AG batch so far). I ended up with the 6 gallons I intended to end with. Transferred 5.5 of it via racking cane. In the past I've just poured it all in, but at Tasty's recommendation, I made more effort to leave the junk in the bottom of the pot. Plus, I had an ounce of whole leaf amarillo in there and that made for that much more material I didn't want to put in the bucket.
I used Chinook (10 g for bittering, 14 g for flavor), simcoe (1 oz split for flavor and aroma), and amarillo (1 oz split for flavor and aroma). According to BeerAlchemy, I was looking at about 37 IBUs.
I didn't top off last night (pitched around 9 PM) but am seriously considering boiling a half a gal of water tonight when I get home, cooling it, and adding it to the fermenter. Wanted to keep this in the mid-to-high 5s, not in the 6%+ range. Will adding the pre-boiled water a day into the ferment matter?
The FG sample I took was nice and light colored. More so than any other brews I've done thus far. I've done two extract APAs (one based on this same recipe) and one AG Pale (Jamil's from BCS that uses Munich and Victory). The sample definitely had a lot of particles floating around in it, despite having used the racking cane to transfer.
Guessing that the higher FG is a combination of a slightly higher efficiency in the mash, as well as boiling off a bit more than the 2 gallons planned.
I am intending to rack to a glass carboy secondary as the ferment nears completion and dry hop. Thinking chinook and amarillo (pellets)
