Would someone wanna help me convert this to a partial mash? The book does not offer one, just an all grain and extract.

So I just brewed the More Beer Janet's extract kit and wasn't ready for all of the losses. I started with a full 5 gallon boil then hand whirled in my ice bath and lost atleast a 1/2 gallon in the trub/hops. I tried to use my screens and strainers to get as much as possible. Craxy enough I ended up with 1.080 at 70deg after adjusted back to 5 gallons. I used WLP 001 like suggested and had at least 3/4 gallon of muck in the bottom of my primary when I went to rack off to dry hop. So now I have 4.3 gal of VERY good tasting beer dry hopping in my secondary. After 1 week my nearly final gravity is 1.016 at a steady 68-70 fermentation.

So where did I go wrong or is this to be expected? I love the raw taste of this beer and am very impatiently waiting to keg in ~ 10 days. Big questions are:

Why are my gravities so high?

Should I have rested my cool virgin wort to allow for a more complete settling of the trub? I used the whirfloc at 5 min (for the first time) along with 1tsp irish moss at 15min

Should I have waited longer for the yeast to settle out? I have never used this yeast and my experience with Wyeast has been a neat/clean cake in the bottom not 3 inches of muck!

Should I add boiled H2O to bring my batch to a full 5 gallons for kegging?

Thanks for any suggestions.

Yikes! I'm going to get right on this. The recipe should match Brewing Classic Styles exactly.

More beer recipe is
12 lb 2 row
1 lb white wheat
1 lb crystal 40
4 oz crystal 40 (maybe this is a typo since its listed twice)
8 oz chocolate malt


It's not that different - just checked the book. The only difference is the CaraPils Dextrine Malt. I first compared it to a recipe floating around the net which was quite a bit different than whats in the book.

No but if somebody was selling your recipe, wouldnt you want to know if what they sold was different than what it was?

I ordered two kits of the all-grain version of Janet's Brown today; does anyone know if the recipe issues (if there were any) have been rectified?

P.S. Tasty, if you are listening . . . with regards to process, what one thing would you point to as being the most important step in nailing this recipe? Excepting the dog hair of course.
