I like the capt's thought on a second tincture to balance it. I think it was mentioned elsewhere in this thread (possibly by Bug) that if you really want control, you'd do separate tinctures of each spice and blend them to taste before blending that with the beer to taste.

My only concern is that grinding the cloves adds more surface area to the Makers Mark. (Mmmmmm, Makers Mark.) Did someone say Makers Mark? :roll: But I digress. And more surface area might make it stronger. Of course, I could be talking out of my ass. I say, phaqit! Add it and see what happens. While I didn't do the tincture method, you might want to consider it here.

Whilst at our local coop getting the turbinado sugar, in the bin beside it was "maple sugar"... Looked alot like brown sugar, but the flavor...OMG!! Goes for $11/lb., but wow what flavor. Wonder what this might add, if anything (besides more $)?

Will be brewing a winterized version of this soon, and just for clarity - don't grind the spices, and after toasting oats let them air out in paper bag for 24 hrs or so before brewing?

For creating the sugar solution, how much water would one use for a pound of sugar. I know it says use a 3:1 ratio. So what is my water to sugar conversion? One is a solid and the other a liquid. Sorry if this is a dumb ?, I have just never done this before. I am a quick learner though...:mrgreen:

Just go by approximate volume. A pound of sugar right at 2 cups a pound, so 6 cups of sugar is about right.
