Just wanted to verify. I've never done a Mini Mash before but did you only use 2oz of Munich and 2oz of Wheat or are those weights a typo?

+1 swap out the lme for dme. Dme general attenuates better. I have never had a problem with short boil dme. I can usually get a really good break in five minutes of boiling. Every system and brand of malt are different. Do what works best for you.

How does it taste compared to the real thing? If you are hitting your gravity numbers I bet your ibus are low. I am willing to guess it takes dogfish head 45 minutes to chill. They are getting a lot more ibus out of the last ten minutes of hop additions. Move a good portion of your 40-30 minute hops back a half an hour.

thanks, never thought DME or LME would be different in attenuation. LME is so much easier to work with...My gravity numbers are good, I thought I used a lot of hops, but figuring out the addition times and such is beyond me at this point, I just follow the recipe. It does not taste like the real thing, not dry enough or citrusy enough (but its good, no off flavors). When you say move hop additions back, do you mean add them later in the boil closer to flame out? Thanks for the help.

Another thing you could do is drop that 152 in your mini-mash to 148-149.

Have you tried a different yeast strain?
Obviously, the malts/extract will play a role, but don't dismiss the flavour impact that yeast has on the final product.

...just my 2 cents
