I used the spice tincture meathod in a gingerbread ale that came out really tasty. Just picked my favorite gingerbread recipe and put the spice mixture in 6oz of rum for 2 weeks. I pulled of 100ml samples and added drops till I got what I wanted. For the base I took a basic amber ale recipe added a bunch of victory and aromatic for some bready flavors and added a bottle of molasses to the fermenter. It took 3rd in a local comp. My wife loved it and wants me to do it again this winter. If I get to it I'll add more molasses this time around.

I just finished brewing the regular (1.050) one again for the 2nd season in a row. Thanks again, Bug for the great recipe.

I got in a hurry and didn't notice the sugar being inverted and added to secondary. It just got dissolved and added to primary like I do on Belgian Golden Strongs. Hope that doesn't make too much difference in the end.

I doubt you will see any difference at all from not inverting the sugar. I skipped the inversion step myself last time and it turned out just fine.

The wife suggested brewing a beer to give away for the holidays, and this is where my mind went. This'll be my second batch doing full all grain (1st was JBA) after being a partial masher for a while. I'm planning on using the D-45 Belgian Syrup instead of Turbinado... Bug if you are interested in trying one when I get it bottled, let me know.

Unfortunately I may end up using WLP001 instead of 002, as the supplier has been oos on the English for the last few weeks and I've got a good liter of harvested Cal sludge from the JBA sitting in my fridge. I feel like I need to brew next Saturday to get it turned around in time for gifting. I know it won't be the same, but sounds like it will still make a damn fine beer.

I brewed the winter warmer version of this at the end of October. Just took a sample for a gravity readying and it is down to 1.011. Beer Tools gave me an anticipated FG of 1.20. One 1.011 seems awfully low. For those of you that brewed the winter warmer version, what was the FG of your beer?

We got 002 in, so I was able to use that. Forgot to take hydro reading, so no idea how I was on my numbers. Just added D45 syrup to it before I left town for Thanksgiving!
