Crapola man! I never even saw these posts… I guess I need to spend more time in here! I am still a pretty die-hard green board guy!

Personally, I drop my eff’s for all my wheat’s. My normal eff is 83%, thus the 75% I posted. I should have explained that better.

I don’t step mash wheats. Just like most all my brews, a single infusion does the trick. I have tried on occasion, but found for my taste it didn’t matter much. I would say that with step mashes, the eff is slightly better with the wheats, but a longer mash seems to do as well. Wheat does have enough boogers to convert itself given time. I also find that a good mash out helps. My link in my sig shows a pretty good overview of how I mash out…

Stuck mashes… Well the only stuck mash I ever had was when I pulled off an ALL WHEAT STOUT! But I managed to get through the day anyway and it made a GREAT beer, and proved that wheat can indeed convert itself if given time.

Even still, your 1.046 will make a GREAT beer!

So what yeasties did you go with?

Don't worry about not getting to it. I just posted a couple hours before brewing. Ya I'm not worried about how it turned out. A lot of trying different stuff. I used a yeast cake of 1056. I want a pretty clean ferment so you can taste the blackberrys. Blackberry bannana clove just didn't sound to good.

The nothing ever actually stuck. It was the slowest runoff I've ever had tho. I also batch sparge and go with the crush till your scared philosophy.
