If you want honey, add a pound at flameout. This will dry out your beer, and may extend fermentation time a little bit. And like the others have said, don't expect a big honey flavor -- it's not easy keeping the honey character from bubbling out of the beer during fermentation. Keep it cool, that is the key thing. Low and slow -- that's the way to do it.

I have my wedding April 28 and brewing my beer,to choose first I considered my wife cultural background which is caribbean,so I choose dark amber ale made with guava fruit and second I made kolsh which is perfect summer crowd beer and at kegging time I added small jar of 14k gold powder which you can buy in specialty pastry supply store.the powder is used to decorate cakes so it is safe to consume.this beer I call The golden bell ale. So generally try to find out what is your friend favourite fruit or if him or his family is originally from other country what is the symbol of this place,what do they use a lot,maybe certain spices.... I wonder if the gold powder will drop out entirely by the time you go to serve it... cool idea, but if you've got a bunch of yeast that settles too, and try to rouse it to get the gold back up in, it may just get cloudy and not be able to see much...

+1. That time of year a saison is what I'm reaching for. Especially if it's on the beach and hot. And high carbonation is in style for saisons, so you can have it nicely bubbly, which kinda plays off of a champagne for toasts.
