Recipe using Simcoe

Douche bags, I was lucky enough to get some hops from Niko which included 8oz of simcoe. Anyone have an all grain recipe which would best represent simcoe in all its glory? I don't mind adding other hops.

If you've got your own IPA recipe, I'd go with that as it would give you a malt basis that you know to be able to compare the Simcoe's contributions to. 8 oz would be plenty to use all in one batch and get sufficient hop character throughout if you are looking to load up it and do a single hop beer.

I've heard that Simcoe isn't particularly nice as a bittering hop. You may want to use it as your aroma/flavoring hop and get your bittering from something cleaner.

+1, though a single hop Simcoe beer will allow you to decide which side of the fence you are on with respect to that hop.
