Adding Strawberry to Jamils Recipe

Hi All,

My wife liked Jamils Blonde Ale that I made. She wants me to make Strawberry blonde for an upcoming party at our house.

Question is ... how much strawberry extract for a 5 gallon batch. I've never used fruit before and have no idea how much.

take a 12 oz sample of beer
add (by the drop) to beer till it tastes correct
do the math to get your total volume of beer
add 3/4 that amount and test... add more to taste.

I agree 100% with Bub's advice.

If you want to use real fruit, try to get a can of Oregon Fruit puree. Use the whole contents in a secondary fermenter.

I added fresh strawberries to my "Jamil's Blonde" this past summer. I used 4 lbs of homegrown strawberries for a 5 gallon batch. Picked them, then immediately washed with cold water, cored and mashed them, and added to the primary fermenter. This was 4 days into the primary fermentation, which was all but over. It turned out great. Just the right amount of light strawberry flavor and aroma. It paired really well with Jamil's Blonde recipe from BCS.

I know this can be risky - adding raw, unpasteurized fruit to fermenting wort, but sometimes the risk is worth the reward. :jnj
