Founders KBS / CBS Clone

Thu Oct 06, 2011 9:55 pm

Tired of trying to chase down these beers so am thinking of taking a crack at a clone. I am planning to start with the BYO recipe for Founders Breakfast Stout, boost the o.g. to hit the stated 10% abv of KBS/CBS, and dose with bourbon and oak until the flavor is right - that should get me KBS. What I'm unsure of is the maple addition to turn it into CBS. I think I want to use grade b syrup for more flavor / less fermentables, but am unsure as to how much I should be adding and when. End of boil? Primary? Secondary?

Input is appreciated!

I'd love to give this a whirl too so hopefully those with experience can chime in here.

Do you want KBS or CBS? Because they're a bit different with the maple syrup...abv..ibu's..etc.

There was a recipe for KBS from the brewer in either BYO or Zymurgy last year. My Brother made it and it was quite good. I will see if I can find the issue when I get some spare time.

I found it, brewed it and it's aging out right now. I used hard maple instead of oak for aging and added more cacao nibs to the keg as well asthe chocolate note wasn't quite where I wanted it when I transferred.
