I want to brew a batch of Ace of Spades Imperial IPA for a friend of mine who has been injured. He's getting better and is stuck at home recovering. His favorite beer is the Ace of Spades, which is cool because on of his favorite bands is Motorhead. We went to see Motorhead in Portland a few months ago and let me tell ya, those guys still got it!
From the Hopworks website:
"Named in honor of rock n’ roll icon Lemmy Kilmister and his band Motörhead’s popular song and album, Ace of Spades prominently features Amarillo, Cascade and Centennial hops, added at every point of the brewing process: mash tun, first wort, kettle, and dry hop. All of the hoppy green goodness results in a beer with a huge citrus hop aroma, flavor and deep, clean bitterness."
I am looking for opinions about how the Ace of Spades IPA differs from Jamil's Hop Hammer recipe. I know Hop Hammer is based off Pliny the Elder. I haven't tasted Ace and Pliny side by side but I remember Ace being a bit maltier and slightly darker. I'll have to buy a bottle of both this weekend and take some notes.
So... I don't know who this guy is but I found this on youtube and for those who can't get Ace of Spades, at least you can have a look at it. The guy isn't the most articulate but what he does eventually say seems accurate (other than the bit about IBU's). I think the Zesty notes he mentions is the resiny flavors from the dry hopping. http://youtu.be/3AWA6RyFgHk
I'm thinking about adding some Munich and Crystal 40 to the basic Hop Hammer recipe and switching the hops to Amarillo, Cascade and Centennial. Other than that I don't know how to go about attempting a clone of Ace of Spades. This isn't something I want to brew 10 times to get right so I am hoping you guys can help shorten my learning curve.
