What do you think about subbing galaxy hops in place of delta hops in your recipe?

Cascade would be the best substitution, but Galaxy? Interesting idea, I had not heard of Galaxy before this comment. It's worth a try. Looks like Galaxy will have a lot more assertive flavor than Delta, there's a lot more Alpha Acids and potential oil content, so keep that in mind.

The Australian hop selection Galaxy is a high alpha dual purpose triploid cultivar with a
marked and unique hop aroma. Bred by Hop Products Australia at their Rostrevor Breeding Garden Victoria. Galaxy, when add late in the boil, has been found to impart a unique and pleasant flavour to beer. The striking flavour has been described as a combination of citrus and passionfruit, whilst still contributing significant bittering.
Origin
Galaxy was bred by Hop Products Australia at their Rostrevor Breeding Garden in Victoria
in 1994. It was bred by crossing a female tetraploid (J78) with a male derived from Perle.
Galaxy is 2/3 J78 and 1/6 a male derived from the Germany cultivar Perle.

Galaxy has become a bit of a favourite among Aussie craft brewers for American style pale ales. Stone & Wood Pacific Ale is one of the best examples of a Galaxy hopped APA.

I just received 8oz of Falconers Flight from More Beer so I plan on brewing a West Coast IPA with that and whatever else I have in the freezer. Possibly Cascade.

Very cool, I like the sound of Galaxy. I'd really like to give it a try if we can get our hands on some here in the US. I've never seen it anywhere.

Good luck with that Falconer's Flight - it's a great hop blend.

Nate,
Hopsdirect.com has galaxy hops. I just got tipped off to it this weekend. They are listed under domestic hop pellets. Just ordered 1 lb. Should be here this week. Waaaaaaayyy cheaper than getting it from our good friends in Australia.
