So I am nervous about my barleywine because last time I attempted this style I bottled it way too soon and it ended up tasting awful. I want to know how I should decide when to bottle it.
I know usually you just bottle a beer when the FG is around its target value but I feel like when you have such a high OG and pitch it multiple times with new yeast it isn't so cut and dry. I tasted it a week ago (been in fermentation for about 3 weeks) and it seems to have fermented most of the way due to the big booziness, however it still tasted faintly like yeast.
What should I do?
