BCS Saison- Peaking time in bottles?

Sat Aug 14, 2010 3:24 pm

My BCS saison has been in bottles for 3 weeks now. It tastes decent. Somewhere I read a couple months down the road saison's deepen in complexity. This isn't a real big OG beer. Does anyone have advice about when this beer peaks? I would hate to drink this all up now if they are going to peak in a couple months.

Thanks,
Aaron

Have made that beer and packaged both in bottles and in kegs. The kegs tasted best at 3 mos cold conditioned (40 degrees) and seemed as though they could have lasted much longer and still been great!

The saison I bottled was his export/strong saison recipe and it was taking medals at 3-4 mos in the bottle rolling in at 8% ABV. typically saisons can be aged a bit, but just keep sampling them until you find them tasting delicious, then schwill them up! If you want, I could hold onto a 12 pack for you and let you know when they are just right for drinking....
