Chocolate Dunkel

Hi All,

I'm coming up with a recipe for a chocolate dunkel and I'm after some advice/feedback.
I made a dunkel recently that turned out very nice, I would like to delve a little deeper into the style and I thought a chocolate dunkel might be a good idea.
I'd like a super smooth dunkel with hints of chocolate at the end.
I was thinking of adding a mix of chocolate grains and coco (midnight wheat, chocolate, pale chocolate) plus some crystal and a little lactose. The theory being the chocolate from the grains and coco will be a little more chocolatey with some extra sweetness. The lactose will also help with the mouth feel, maybe I could add some oats too to make it extra smoooooooooth.

What are peoples experience? Anyone done something similar?

Sounds fantastic! I think adding a small percentage of oats for mouthfeel is a good idea. if you like sweet beer than go ahead and add lactose in milk stout dosages, but if it was me brewing it I'd stay away from that type of residual sweetness. I'd be interested to see this with a bit of rye added as well. what type of hops are you considering?

This is the recipe I've currently pencilled down:

.45kg Crystal (Medium)
.45kg Oats, Flaked
.45kg Pale Malt (2-Row)
.2kg Pale Chocolate
.2kg Chocolate Wheat
3kg Liquid wheat extract
.25kg lactose

40g Hallertauer - Boil 60min

.23kg hersheys cocoa powder at end of boil

Weihenstephan Weizen yeast.

I was thinking of adding some vanilla too.

Thoughts?

I have just kegged a golden ale using some rye. First time using it so I'm very interested to see what flavours it will impart. About to keg a smoked marzen (my first lager) and I have also just kegged a honey wheat beer. Currently also have a traditional draught fermenting. Its going to be a goooood summer!

What have you got going at the moment?
