apple or water?

just exploring possible idea's on how to make great brews. one idea im pondering on is swapping some or all the water in a 5 gallon brew for good quality applejuice?

Just be careful on what type of applejuice or cider you use. If it contains preservatives it will inhibit your yeast.

If you boil apple juice, it will set the pectins (sugar complexes used to make jelly and jam solid), resulting in a haze in your beer. Shops sell pectic enzyme which will clip them apart if this is a concern (mostly cosmetic). The preservatives Pharm mentioned are most commonly sorbitol or potassium sorbate. If it has ascorbic acid, that's fine. Do be aware that using a large amount can give it a 'cidery' (duh) character, which may detract from some styles. I think that an apple wheat may work well enough, and make the pectin haze a moot point.

I seem to recall James talking about this on BBR quite a few years back, but I don't recall what he called it. It was pretty interesting, but I never got around to trying it out. If it's clear & yellowish, you don't want it. Look for that cloudy brown juice. (Can't wait to hear what that turns into in about 12 posts) I was going to take a sanitized corny to the local orchard when they were pressing to get pure apple juice that hasn't been treated in any way & use it within 24 hours. I'll see if I find the time this fall.

Brown and cloudy could be a sign of dehydration or a UT infection....
