WLP 653 Brett Lambicus + Wood Chips

Wed May 25, 2011 12:02 am

Anybody have experience with WLP 653 Brett Lambicus. I pitched it into a kegged, aging at 70 degree room temp, Belgian Quad that finished high at 1.025 SG. How long should I age this before crash chilling. I was also thinking of adding wood chips, but I'm not sure how long to let the beer sit on the wood. Any help would be much appreciated!
Enjoy Great Beer!

The Brett will chew that down some, but was this a vial or a starter of BL? Its gonna take longer if it was just a vial. I would guess atleast 3 months.
The wood chips are up to you. When it tastes good is all I can offer. Chips are pretty quick though. 3 weeks?

You dont want to leave the chips in for a few months. I would guess 1-3 weeks on the chips. I added some chips in a scottish strong for a few months and didnt like the results.

The wood character will depend on quantity type and length. 1oz for a week would be pretty noticeable with chips, less with cubes, and less with staves. The brett could take anywhere from a month to six but lambicus is the most aggressive so once it gets going it will take the beer down to a low fg for you. The best way is to just take a sample once a week and when its ready to get off of the wood rack to a new keg. When you have the brett character you want then crash cool and drink up.
