Anybody have experience with WLP 653 Brett Lambicus. I pitched it into a kegged, aging at 70 degree room temp, Belgian Quad that finished high at 1.025 SG. How long should I age this before crash chilling. I was also thinking of adding wood chips, but I'm not sure how long to let the beer sit on the wood. Any help would be much appreciated!
