Culturing Franziskaner yeast?

Mon Aug 16, 2010 7:28 pm

I read a recent post about making a Franz clone, and culturing the yeast was mentioned. Is this as easy as collecting the sediment off the bottom of a couple bottles of Franz and adding them to a sterile container of wort and creating a starter slowly over time, or is this going to require a Petri dish etc...? If this topic has been covered before, I apologize I didnt see it in my search. Thanks.
Jason.

Yes, that's about all there is to it. I think they used to sponsor an annual contest with entries limited to beers brewed using yeast obtained in this way. I hope I'm not thinking of some other brewery because most condition with a lager yeast. The brewery I'm thinking of was one of very few that condition with the main fermentation's yeast. Now I'm starting to think maybe it was Aventinus. Can anyone help me out here?

The point being that you need to confirm that Franziskaner conditions with weizen yeast. A weizen brewed with typical conditioning yeast is going to be very disappointing.
